Step inside Beets , a newly opened salad bar in Gothenburg, and you’ll find more than crisp greens and bold flavours. Beneath the tables and chairs sits a standout design choice – Woodura Herringbone laid like a rug into polished concrete, bringing warmth, elegance and a subtle edge to the minimalist interior.
“I saw something similar on Pinterest and knew immediately – we had to do it,” says owner Andreas Olsson. “I’ve always loved herringbone. It gives an exclusive feel and brings movement to an otherwise sleek space with clean lines.”
Installed across 30 sqm in the centre of the restaurant, which has been open for three months, the Woodura Herringbone in the colour Natural needs to handle daily foot traffic. “So far, it’s held up really well. And it looks and feels just like real parquet – but at a better price.” The pale matt finish complements the ash-toned tables and softens the otherwise industrial elements: exposed ceilings, black spotlights and raw concrete.
A balanced blend of raw and refined
Beets serves up more than great salads. The interior strikes a perfect Japandi-inspired balance: minimalist yet warm, structured but natural. Along the bar, light brick walls offer texture, while fresh produce is mirrored by the space’s airy, open layout. “We wanted a Nordic, clean and simple look – but still warm,” explains Andreas.
Chosen after a visit to the Bjelin showroom in Gothenburg, the Natural shade was love at first sight. “I saw it and decided on the spot. It just worked.” For Andreas, the floor ties everything together – without overwhelming the pared-back aesthetic. “I love how we ended up doing it. I’d absolutely recommend this kind of floor to other cafés or restaurants.”
